First edition of the last work by the father of "chaptalization" J.-A. Chaptal (1756-1832) in which he describes the application of scientific principles to the cultivation of land. Numerous reflections on butter, beets, fermented and vinous drinks, alcoholic liqueurs, distillation, potatoes, fruits, cheese, milk, syrups, sugar, etc.
